I almost lost hope on Sunday after my poor eating habits spun out of control. But, Mondays are a great restart. Overall, not perfect -- but, I tried. I also missed out on the gym, again. Honestly, I didn't eat enough over these two days. I'll keep this one short.
For lunch I had a cup of cookie crisp cereal with soy milk. For dinner, I had cup noodles with shrimp. After not eating enough on Monday -- I did the same thing on Tuesday. I smelled the yummy smell of pickled onions though, and I was hungry.

I had a half of a boiled plantain with a singular fried egg and a few bites of pickled onions. Plantains are a famous traditional food in most of the Caribbean and is actually healthier to eat than potatoes! Calorie wise, plantains are similar to potatoes -- but, they actually contain more vitamins and minerals required for our nutrition such as vitamins A, C, B-6, fiber, magnesium, and potassium. They are also quite versatile and can be eaten fried, boiled, or baked.
Today I wasn't very hungry, but I was so thirsty. By 4:30pm I already had half a gallon of water. I was even downtown today for my laser appointment and all the fast food places didn't call my attention. Not even Shake Shack or Blockheads! Weird, right?

This concludes my food diary for July 2nd and 3rd. I know it may seem like I'm starving myself, but I'm not. My appetite has been really low these past two days and it's probably because I ate like an animal this weekend. I'm also sleeping all morning and part of the afternoon, so that also may be affecting my appetite negatively. I need to do better tomorrow, but I know it will be difficult to align that thinking with my 4th of July plans. Stay tuned!
