Food diary, day 1.

It's been a week since I got back from Las Vegas and I tried my best to choose healthy options, but I also ate a lot of junk. I've been trying to lose weight and have a healthy diet, so I'm going to start meal prepping again. This food diary is from Thursday, June 28th -- I made a great deal of smart choices and some not so great ones. But, it's okay because today is a new day!

So, I woke up around 11am and saw a big container of my favorite kind of spaghetti .. it was incredibly hard to resist. I only took two bites, I promise! I reached into my utensils cabinet to grab a fork and swirled around some spaghetti straight into my mouth, twice.

Okay, I'll admit I started the day off way wrong -- but, I still had the rest of the day to make up for it! I'm only human. If you're not a fan of green smoothies you might find the picture on the right incredibly gross! Green smoothies are actually a great way to get your fresh fruit and veggies intake in a day. For this smoothie I added: 8oz soy milk, a handful of spinach, 6 small strawberries with stems removed, and half of a banana. I blended it all together in my Ninja blender using the large attachment to allow me to add 6 cubes of ice as it blended. I don't add any sugar and it tastes great and keeps me full for a couple of hours.


For lunch, I had some of my leftover tofu teriyaki with zoodles and broccoli that was made the day before. This dish was prepared by using my Ninja spiralizer (red disc) to make one zucchini into zoodles. Next, I diced up some extra firm tofu from BJs after removing all moisture and letting it cook on each side for at least one minute. I removed the tofu to steam a few pieces of broccoli. Next, I removed the broccoli and added the zoodles to the pan seasoning with cayenne pepper and ginger powder only. Lastly, I removed the zoodles and added the cooked tofu along with low-fat teriyaki sauce. This is a great tasting healthier version of Asian food!

Can't forget the water intake! While I was still working I would drink an upwards of a gallon of water a day. Drinking water keeps our over 60% fluid filled body hydrated. Our lungs for instance are 83% water, kidneys are 79% water, while our brains and hearts are 73% water -- drinking water will ensure that our internal organs are working properly by keeping their percentages high. In addition, our skin is 63% water and drinking water can prevent dry skin, acne, and sunburn during the summer months! While it's extremely important to drink water, I've been slacking and only got to drink 10oz of water this day, which is extremely low.

Dinnertime! I walked into the kitchen hoping to make a salad only to see my mom already making one for us. My mom is extremely supportive in my health goals and often meal preps for me without me having to ask. She diced a ripe avocado, added a can of drained chickpeas, made some quick pico, and finally threw some of my leftover teriyaki tofu in the mix. She tossed the salad with some olive oil, apple cider vinegar, and a pinch of salt and served us both. This is a quick and yummy salad filled with good fats, leafy greens, and protein! I ate about two cups worth and felt satisfied and I still picked a bit before putting the leftovers away.


I ate about 6-8 Pistachios to take my mind off the craving of something sweet. I tried my best to have some self-control and even talked about it with my mom to try to convince myself not to give in. I peeled a clementine and tried to eat it slowly. Clementines are a great source of potassium, which aids in reducing inflammation, reduces hypertension, and aids in dental hygiene. In addition, they're a great source of vitamin C (prevents infections like the cold or flu), B (protects your liver from disease), and folate (for brain health and mood regulation). They're also only 35 calories each! A quick and easy healthy snack overall.

Okay now it's about to be 8pm and I really need to stop eating. It's been a couple of hours since I ate the clementine and I'm actually craving chocolate. I think about the time I went to BJs to grocery shop and willfully chose to walk past the Bark Thins. I was definitely regretting it now ... I chose to have a cup of Honey Bunches of Oats with Almonds, a bit of soy milk, and a tablespoon of Nutella. Nutella is a household staple, but it's something I shouldn't be eating since I'm lactose intolerant and trying to be completely dairy free. This finally satisfied my craving and I went to bed without thinking anymore about food.


This concludes my first food diary! I promise that I will do better.
